Summary: Performs preparation of fresh salads, fruits, vegetables and cold food items. Washes, cuts, portions and assembles ingredients according to approved recipes and production standards to ensure quality, freshness and presentation.
Essential Duties and Responsibilities:
Obtains daily production schedule and preparation requirements from Chef.
Washes, cleans, peels, trims and cuts fruits and vegetables for salads, garnishes and cold food production.
Prepares composed salads, tossed salads, grain bowls, dressings, fruits and salad bar ingredients using approved production standards to ensure proper quality, serving temperatures and standard portion control.
Measures and portions ingredients according to standardized recipes and portion guidelines.
Stocks and replenishes salad bar items, dressings, toppings and cold food products following approved merchandising guidelines.
Carries pans, containers and trays of food to and from workstation, storage areas and refrigeration units.
Stores food in designated areas following HACCP standard wrapping, dating and rotation procedures.
Cleans, sanitizes and maintains prep tables, work surfaces, refrigeration units, utensils and floors in the preparation and serving areas.
Monitors product freshness and appearance; removes and replaces items as necessary to maintain quality standards.
Interacts with coworkers to ensure compliance with company service standards, inventory control and food safety procedures.
Maintains clean, safe work environment to comply with sanitation, ServSafe and safety requirements.
Interacts with guests and clients while making salads
Performs other duties as assigned.
