Izanami Restaurant at Ten Thousand Waves is seeking an experienced Sushi Chef to join our culinary team.
As a Michelin-recognized Japanese restaurant, Izanami is committed to exceptional ingredients, thoughtful preparation, consistency, and a high standard of hospitality. We are looking for an experienced professional who takes pride in their craft and wants to be part of a talented culinary team in one of Santa Fe’s most unique dining environments.
Qualifications:
Minimum 5 years of sushi culinary experience required
Strong knife skills and advanced knowledge of sushi and sashimi preparation
Experience with fish fabrication, portioning, and proper seafood handling
Knowledge of Japanese ingredients, techniques, and presentation
Strong understanding of food safety, sanitation, and proper storage
Ability to maintain quality and consistency during high-volume service
Excellent organization and attention to detail
Ability to work efficiently and calmly in a high intensity environment
Strong communication and teamwork skills
Dependable, punctual, and committed to maintaining high culinary standards
