Mexican Spinach or Chaya is beautiful plant with ornamental leaves that can be grown as a beautiful landscape plant. The leaves are edible and are highly nutritious. According to Purdue University, Mexican Spinach is far more nutritious than regular spinach. It’s very high in protein, calcium, iron, Vitamins A & C. The leaves should be eaten after boiling for a few minutes & added in your favorite recipe. They should not be eaten raw. I enjoy them in soups & stews, with scrambled eggs and as a stuffing with cheese in pastry sheets.
They can take full sun and are very easy plants to grow in the valley.
I am in Scottsdale, but I go to North Phoenix every week.
