Cinderlands Beer Co. is hiring a hands-on Kitchen Manager to run the systems behind the scratch kitchen at Cinderlands Warehouse, our brewery and restaurant in the Strip District: training, hiring, inventory and food cost, vendors, sanitation and compliance, and the day-to-day organization that keeps a high-volume kitchen and a growing private events business running smoothly.
This is a working leadership position, and its first responsibility is teaching. You will own how our line cooks and prep cooks learn the kitchen (SOPs, recipes, platings, portioning, station setup, food safety) and hold the team to that standard every shift. That includes training prep cooks on daily service prep and on prep for private events, where large-format production has to be scaled, timed, packed, and executed to the same standard as a Friday night on the line.
THE DETAILS
- Full-time, salaried, exempt
- $60,000 - $65,000 per year, based on experience
- 45-50 hours per week; flexible scheduling is a must (nights, weekends, holidays, private events)

WHAT YOU'LL DO
- Train and develop the kitchen team: SOPs, recipes, platings, portioning, and station setup; plating guides, recipe cards, prep specs, and station checklists; coaching on the floor and in one-on-ones; cross-training across stations
- Train prep cooks on daily service prep (prep lists, batch recipes and yields, par levels, labeling and dating) and on private-events prep (scaling recipes, timelines, pack-outs, labeling, holding)
- Hire and onboard: phone screens, paid working interviews, onboarding paperwork and Toast setup, ServSafe and RAMP credentials before a first shift
- Manage inventory, food cost, and vendors: regular counts, monthly costed plates, portion and waste checks, invoice review and credits, pricing reviews, ordering built around the events calendar
- Uphold sanitation, compliance, and facility standards: food handling and storage, labeling and dating, cooling and sanitation logs, HACCP where applicable, RAMP and ServSafe, a weekly deep-cleaning schedule, operational supplies (BOH and FOH)
- Support scheduling and service: labor levels including private-events coverage, and working prep, the line, and service leadership as needed
WHO WE'RE LOOKING FOR
- At least three years in professional kitchens, including meaningful leadership as a sous chef, kitchen manager, or lead cook
- A track record of training cooks and holding a line to a standard
- Working knowledge of food cost, inventory, portion control, and invoice review
- ServSafe Manager certification, or the ability to get it within 30 days of hire
- Comfortable with restaurant systems such as Toast and scheduling and inventory tools
- Organized, communicative, and constructive when volume spikes or plans change
Helpful but not required: catering or private-events production; scratch-kitchen, seasonal-menu, or brewery and taproom experience; building SOPs, recipe books, or training programs; HACCP or RAMP training; culinary education. A degree is not required.
PAY AND BENEFITS
- $60,000 - $65,000 annual salary, based on experience

PHYSICAL REQUIREMENTS
Extended standing and walking; hot surfaces, open flame, sharp tools, wet floors, and refrigerated spaces; lifting up to about 50 pounds. Reasonable accommodations will be provided for qualified individuals with disabilities.
