Sweet Carocas is a growing Miami-based manufacturer of premium refrigerated and frozen desserts.
We are looking for an experienced Pastry Chef / Production Pastry Chef who is ready to take ownership of daily production, maintain consistent quality, and help lead our pastry operation as the company continues to grow.
This is a great opportunity for someone with experience in pastry, bakery, commissary kitchens, high-volume production, hotels, catering, or food manufacturing who wants to move into a leadership role.
What You'll Do
-Lead the daily production of refrigerated and frozen desserts
-Prepare, scale, batch, and execute pastry recipes accurately
-Maintain consistent quality, flavor, appearance, portion size, and yields
- Coordinate mixing, baking, filling, assembly, portioning, and packaging
- Standardize recipes, batch sheets, and production procedures
- Supervise and train a small production team
- Organize daily production priorities and ensure orders are completed on time
- Monitor ingredient usage, yields, waste, and production efficiency
- Maintain a clean, organized, and food-safe production environment
- Follow GMP, HACCP, FDA, and food safety procedures
- Help identify opportunities to improve production speed, consistency, and workflow
- Collaborate with management on new products and recipe improvements
What We're Looking For
- 2+ years of professional pastry or bakery experience
- Experience in high-volume production strongly preferred
- Experience in a bakery, commissary kitchen, hotel, catering operation, or food manufacturing facility is a plus
- Strong understanding of pastry techniques, recipe scaling, batching, baking, and dessert assembly
- Ability to follow standardized recipes and maintain consistent results
- Leadership or team-supervision experience preferred
- Strong organizational and time-management skills
- Detail-oriented and focused on quality
- Reliable, responsible, and able to work in a fast-paced production environment
- Knowledge of GMP and HACCP is a plus
Compensation
Base Salary: $60,000/year
Performance Bonus: Up to $12,000/year
Total Compensation: Up to $72,000/year
Performance bonus opportunities are based on areas such as production performance, consistency, efficiency, yields, waste reduction, quality, and operational goals.
