Eight weaned pigs available that were born in June. They are 75% Berkshire and 25% Hereford. Males have not been cut yet but will be castrated in the next couple of days. These pigs grow well and make excellent meat. Berkshire meat features fine streaks of intramuscular fat distributed evenly through the muscle. This fat melts during cooking, naturally basting the meat.Darker Color: The meat has a rich, deep rose or ruby hue due to a higher concentration of myoglobin from active muscle fibers.Rich, Sweet Flavor: It offers a buttery, savory taste with a slightly nutty or sweet profile instead of the mild flavor of standard supermarket pork.High Moisture Retention: A higher natural pH and fat content prevent the meat from drying out easily.
