About us
Dinah is a 57-seat daytime restaurant and event space on the corner of Clinton and Atlantic. Our food is in the tradition of the classic New York diner: eggs any style, griddle work, the breakfast plates regulars order without opening the menu. We use top-quality ingredients and want every dish to be served with care for our customer's experience. We’re looking for a chef who has cooked this food for years and knows how to run a weekend rush.
The role:
You’ll run the line. You’ll own the egg station, lead a line cook on grill/griddle, and a prep cook, and make sure every plate leaves the kitchen fast, delicious, and consistent. This is a working chef role. You’ll be on the line cooking, not managing from the office.
What you’ll do:
Manage and cook on the grill, griddle and egg station through high-volume breakfast and brunch service
Cook eggs to order every time: over easy, poached, scrambled soft or hard, and omelettes
Lead, train and schedule the day’s work for one line cook and one prep cook
Follow and update prep lists and par levels, and make sure the kitchen is ready before doors open
Keep ticket times tight and plates consistent during the weekend rush
Maintain clean, organized, inspection-ready stations, and follow NYC DOH food safety standards
Flag ordering needs and help control waste and food cost
Communicate clearly with the front of house during service
What we’re looking for:
At least 5 years cooking breakfast in a high-volume NYC diner, coffee shop or brunch kitchen
Expert on the grill and flat-top, with fast, precise egg cookery
Experience supervising or training other cooks
Calm and organized under pressure, and able to run a rush without losing quality
Reliable every Thursday through Sunday, including holiday weekends
NYC Food Protection Certificate preferred (or willing to get one)
Able to stand for long shifts and lift up to 50 lbs
Why Dinah
Steady daytime hours with your evenings free
A real leadership role in a neighborhood restaurant with loyal regulars
An owner who works alongside the team and listens to the kitchen
To apply: Send your resume and a few lines about the breakfast kitchens you’ve run.
